Bio

Dr. Sara Spilimbergo is an Associate Professor of Chemical Engineering at the University of Padova. She received her degree (1998) and her Ph.D. in Chemical Engineering (2003) at the University of Padova. Her main research interest comprises innovative technologies at low temperature for the treatment of food and biological matrices, in particular using high pressure CO2 both for pasteurization and drying. She served as coordinator and project lead of different national and international projects, some of which in collaborations with food and pharmaceutical industries. She is the author or co-author of 130+ peer-reviewed papers, book chapters, conference proceedings. She owns 3 patents.

Alessandro Zambon

Bio

Alessandro Zambon is Assistant Professor at the Department of Civil, Chemical, Environmental and Materials Engineering of the University of Bologna. Master’s Degree in Chemical Engineer (2009) and Ph.D. in Industrial Engineering (2013) from University of Padua (Italy). He has gained interdisciplinary research between biotechnology, food science and engineering. He has developed microfluidic Organ-on-Chip devices for drug screening and disease studies. Since 2014, he has been researching on supercritical fluids for biomedical and food applications, in particular for pasteurization and drying of fresh products. In 2021/2022 he participated in the 5th EU-FORA (EFSA) programme on food risk assessment.

Bio

Riccardo Zulli is a PhD candidate in Industrial Engineering (Chemical and Environmental curriculum) at the University of Padova. He obtained his Master’s Degree in Chemical and Industrial Process Engineering (2020) and the abilitation of Industrial Engineer (2021). Since the master thesis, his research work focused on the study and design of food pasteurization and drying high-pressure processes, publishing 4 research papers.

Bio

Pietro Andrigo is a PhD candidate at the Department of Industrial Engineering of the University of Padua. He obtained his master’s degree in Food Science and Technology from the University of Padua in 2020. Since October 2020, he has been collaborating with the Superunit research group, focusing on the research related to the effect and effectiveness of innovative technologies for low-temperature pasteurization, particularly through the use of supercritical CO2. He has developed skills in Data Science and applies them to the analysis of data collected during research.

Bio

Fabio Santi is a Ph.D. student at the Department of Industrial Engineering at the University of Padua. He obtained his Master’s degree in Food Science and Technology from the University of Padua in 2019. During his Master’s thesis, his research focused on the antioxidant activity and oxidative stability of food emulsions. He has worked at cosmetic and paint manufacturing companies in the role of quality control. Since 2020, his main research activity has been focused on the field of pasteurization with supercritical fluids.

Bio

Elisa Lincetti is a research fellow at the Department of Industrial Engineering of the University of Padua. She obtained her master’s degree in Chemical and Industrial Processes Engineering at the University of Padova in 2022. During the research period for the master’s thesis, in collaboration with the Universitat Politecnica de Valencia, she studied two different ultrasound technologies for the food safety field. Since 2022, her research activity is focused on the low-temperature pasteurization with supercritical fluids.

Bio

Marco Cardin is a Postdoctoral researcher at the Department of Industrial Engineering of the University of Padua. He obtained his master’s degree in Food Science and Technology in 2018. He is defending his PhD in Veterinary Science from Padova University and Université de Bretagne Occidentale. His research interests are focusing on food supercritical drying and the evaluation of its effectiveness in inactivation of particular components of the food microbiome.
